Chinese-inspired chilli oil
For stir frying

Ingredients
- 1 cup (250ml) peanut oil
- 6 cloves
- 3 star anise
- 1 cinnamon quill
- 2 tbsp sweet paprika
- 1 tbsp sesame seeds
- 4 tsp chilli powder
- 1 tsp sichuan peppercorns
- 0.5 tsp whole cumin seeds
- 0.5 tsp ginger powder
- 0.25 tsp fennel seeds
- 0.25 tsp white pepper
- 0.25 tsp ground cumin
How to
- Set aside the sweet paprika, ground cumin and 1/2 a teaspoon of the chilli powder
- In a saucepan, bring the oil to a low heat and add the remainder of ingredients
- Let the spices steep in the oil for at least 30 minutes, keeping the oil warm but not hot
- Bring the mixture to a high heat and pour over the spices reserved in step 1
- Let cool and strain through muslin (cheese) cloth
- Use immediately or store in the fridge
Notes
- All measurements are metric
- The amount of chilli powder required is an approximation due to variability; adjust accordingly
- Subsitute fresh chilli for the chilli powder if desired
